Ham and Cheese Quiche

This one is from allrecipes.com and adjusted by me slightly. The actual recipe is posted at the bottom of this page. The things I changed are in bold.

Ingredients

2 tablespoons of all-purpose flour

1/2 teaspoon salt

5.4 fl oz of unsweetened organic coconut cream (I use this kind)

3 eggs

2 slices Swiss cheese (dairy free? Try this!)

1 recipe pastry for a 9 inch single crust pie (* recipe listed below)–or store bought

1/2 cup chopped fresh spinach

4 oz sliced fresh white mushrooms (or of your personal choice)

A few slices of fresh ham, cubed (1-2 cups approx)

1/2 cup shredded Cheddar cheese

Directions

Step 1 Preheat oven to 350 degrees F (175 degrees C) and make pie crust and press the crust into a pie tin (I did not use a roller which is why there are so many finger marks. I was not concerned that the crust look “pretty” for this project.

Step 2 Beat together flour, salt, coconut cream and eggs in a medium bowl

Step 3 Place Swiss cheese flat in the pie crust. Arrange spinach evenly over Swiss cheese, then cover with mushrooms. Pour the flour and egg mixture over the mushrooms. Cover with cubed ham and top with Cheddar cheese.

Ready for baking

Step 4 Bake in the preheated oven 45-55 minutes, until surface is golden brown.
