Christmas Pistachio Pudding Pie

Here’s a simple Christmas pie you might even be able to put together today to eat tomorrow.

My favorite store Aldi usually has a pie that reminds me of this, but I could not find it this year. Come to think of it, I couldn’t find the eggnog either, which I’m sure makes some people in my circle happy, since I try to force feed it to them.

Anyway, this is so simple, the kids can make it.

Here’s what you need:

Two packages of instant pistachio pudding mix (Jell-o brand is a fav), three or four peppermint flavored candy canes (or a handful of peppermint candies) , 8 oz or larger of whipped topping, graham cracker crust pie shell

Step 1: Crush the candies (I suggest keeping some larger pieces but if you want, make it into a “powder”)–I wanted the red in the candies to show through

Step 2: In a medium to large mixing bowl, make the pudding. Where it calls for 2 cups of milk per package, I reduced it to 3 cups total to make it thicker.

Step 3: Fold in the whipped topping. I reserved some of it for topping later on

Step 4: Mix in the peppermint candy crush mixture

Step 5: Spoon into pie shell and freeze

Step 6: Add reserved whipped topping and decorate as you choose! The finished product is the featured image! This should serve 8 people.
