Dandelion Corn Bread
There are a few things I love about spring! One is things coming back to life after a cold, barren winter, another is all the beautiful birds coming back from wintering in the south, and a third is DANDELIONS! I know what you’re thinking, those are weeds!!! But I really only like them when they are still bright and yellow. And we have a very large yard, so this equals lots of dandelions! So I like that mantra that says, “when life gives you lemons, make lemonade,” and hence this is how I learned how to make use of what others consider a nuisance this time of year!

I picked about 3 cups worth of dandelion flowers today, and decided I wanted to make corn bread. It is best to do something the same day you pick them, so after washing them and leaving them in the colander to dry, I rolled up my sleeves for some actual baking (yes, for those of you who doubt, I really baked something!) . I have white corn meal in the house, so I used the recipe on the back. I do not have tons of pics because I didn’t realize I wanted to use this for a recipe until I pulled the finished product out of the oven and it was beautiful.
So follow the pictures! I used my food processor again to make the dandelion flowers manageable in the batter. The result is a healthy, hearty corn bread variation only the brave will enjoy! (Don’t want to eat a dandelion? SHHHH, secret! Just leave them out of this recipe.)
